Baked Macaroni & Chese

Ingredients

  • 1 onion, 1/4 minced and 1 thick slice
  • nutmeg
  • cayenne
  • pepper
  • salt
  • 1/4 tsp. paprika
  • 1/2 C. buttered bread crumbs
  • 2 Tbsp. blue cheese
  • 2-1/4 C. sharp cheddar (or your choice of cheese)
  • 2 tsp.sherry
  • 2 C. milk
  • 1 bayleaf
  • 2 whole cloves
  • 2 tsp. lemon juice
  • 4 Tbsp. flour
  • 4 Tbsp. butter

Method

Step 1

Melt butter, whisk in flour. Remove from heat and whisk in milk. Return to heat, simmer, and whisk until smooth and thickened (1-2 minutes). Season with salt, pepper, nutmeg, add bayleaf, and 1 thick onion slice stuck with cloves. Whisk in lemon juice and sherry. Stir in minced onion, 1 bayleaf, paprika.

Step 2

Simmer and stir often for 15 minutes. Remove sauce from heat and sicard bayleaf. Stir in 1-1/2 choice cheese and 2 tablespoons of blue cheese. Season with salt and pepper to taste with a dash of cayenne pepper.

Step 3

In large pot boil 2 cups macaroni. Drain and remove to a large bowl. Stir in sauce.

Step 4

Pour half of the mixture into baking dish and sprinkle with 1/2 cup grated cheese. Top with rest of macaroni and then 1/4 cup grated cheese. Sprinkle over top buttered bread crumbs and a dash of paprika. Bake until bread crumbs are lightly browned, about 30 minutes at 350.

Step 5

Let stand 5 minutes then serve.
