Bekah’s Pumpkin Bread

I know it’s yummy but I’m an equal opportunity quick bread lover. This is just a distinctly holiday version.- Bekah

Ingredients

  • 3c sugar
  • 4 eggs
  • 1c oil
  • 2-2.5c canned pumpkin**
  • 3.5c flour
  • 1tsp ea Baking powder, Baking soda, ground cloves*, cinnamon*, nutmeg*, allspice*
  • 2tsp salt
  • 2/3c water
  • Chopped nuts to taste

*Adjust to taste. Whatever you like in your pumpkin pie is going to work fine in this. Add new stuff, subtract, whatever… truthfully it’s hard to screw up. I tend to add a little more cinnamon.
** This impacts the density only. 2c seems to work best for frozen/cold/leftovers or if you intend to put butter on it while it’s warm/room temp. It also makes the spices pop out a bit more. 2.5c makes it deliciously moist on the day of but it’s not as good as 2c the second day and it crumbles too much to butter. It’s also a little bit milder and more pumpkin-y. I usually make 2c.

Method

Step 1

Mix Wet. Mix Dry. Mix Together. Pour into loaf pans- only halfway full unless you want a pumpkin volcano all over your oven.

Step 2

Put nuts on top if you like. If you're nutty for nuts you can stir in whatever amount you like. Pecans or walnuts are my recommendation- not salted. Makes two big loafs or 4 smallish loafs. Big loaf will give 8-10people a proper 1-1.5inch slice. Small loafs are great for 2 people breakfasts- 2 slices + milk = yum.

Step 3

Bake at 350 for 50-60min for a large loaf- give it a look at 45 because burned bread sucks. Check small loafs starting at 30min. If the top starts browning too fast- flatten some foil over the top. Bread is done when a toothpick inserted doesn't come out with goo and the house smells like the holidays.

I experimented last year with freezing some of the Thanksgiving batter to make Christmas loafs and received no feedback on the taste from the family- I took a nibble of one and it was a bit more dense but otherwise equally tasty so you can make in advance. I wouldn’t freeze for more than a month or so though. Thanksgiving to Christmas yes. Christmas to Thanksgiving no.

This also makes delicious muffins (although a potentially large number of muffins- I’ve never made a full batch of muffins before just subbed out a loaf and made muffins instead). Start checking those at 30min too. Could probably make a really delicious cake/cupcakes too maybe with a cream cheese icing. Yum.
