Homemade Pancakes

Not everything in here has to be dinner meals, right? Because having guests over only to pull out a box of Aunt Jemima isn’t impressive at all. Plus, these are much better.

I was reading an Esquire a few months back, and there was an article where the author claimed that the most important article in his wallet was this recipe. I figured I had to try it at that point, and it turned out pretty well. – Lavery


  • 1 1/4 Cup Flour
  • 2 1/2 Teaspoon Baking Powder
  • 2 Tablespoons Sugar
  • 3/4 Teaspoon Salt
  • 1 Egg
  • 1 1/4 Cup Milk
  • 3 Tablespoons Melted Butter


Step 1

Combine dry (flour, baking powder, sugar, salt).

Step 2

Beat egg.

Step 3

Combine wet (egg, milk, melted butter).

Step 4

Mix wet into dry, stir until barely mixed.

The finished product goes well with maple syrup (obviously), but if that should prove hard to find you can do fairly well with whipped stream and strawberry jelly.

Makes quite a few. I typically freeze the leftovers–you can microwave them at any time and they’re almost as good as fresh. Microwaved pancakes go well with peanut butter.
