Vanilla extract is easy to do. Here’s the recipe scaled for 1 cup-ish. – Rhyd
- 1 250 ml colored bottle (keeps the sun out) with cork/cap
- 8+ Grade B vanilla beans (A is overkill since we don't care about pretty) Beanilla Vanilla is a nice source.
- 1 cup-ish (250ml) of 80+ proof good vodka (the higher proofs won't really improve the extract, but you'll probably end up drinking the leftovers so pick something you like).
Boil the bottle for 30 minutes and the knives to remove anything that might alter the flavor. Cut the bean in half lengthwise with the sharp knife. Then take the butter knife and gently scrape up the "caviar", and put into the bottle along with any seeds. Then cut the bean into small pieces, and put those in the bottle as well. Fill with vodka, cap, and shake well.
Continue to shake the bottle daily for two weeks, and then 3 or so times per week after that until week 5 or so. At that point, you can start using the extract. Continue to shake the bottle 3 times or so per week until month 6, topping off the vodka as needed. Once you make it to month 6, strain the extract through a coffee filter, and bottle for storage. The extract will continue to improve over time. You can make vanilla sugar with the strained beans too.
