Also here’s my mexican lasagna recipe that my mom used to make. It’s probably from some better homes and garden book or something, nothing really classy like the Italian recipe above, but she used to make it a lot when I was a kid. – Malan
- 1lb ground beef
- 1 pack taco seasoning
- 16oz can whole tomato
- can of french fried onions (so good to munch on)
- 2 cups grates cheese - cheddar usually but you can use a more mexican variety too
- 2 eggs, beaten
- 2 packages of small tortillas
- 1/2 cup small curd cottage cheese
Use a 9x13 pan, and grease/spray/butter it. Layer the tortillas inside so that the bottom and sides of the dish are completely covered.
Brown the beef and add the taco seasoning, tomatos and half the fried onion. Simmer till its reduced down and most of the juice is gone. Dump the whole mix into the pan and cover with a layer of tortillas.
Mix the cottage cheese, eggs and half the cheese and pour into the dish.
Cover the pan and bake 45 min @ 350. Remove and uncover and add the rest of the cheese to the top and add as much of the fried onions as you like. Bake another 5 min uncovered and let stand ~10 min.
