Roast Chicken

Thanks to bartolimu and Viator for the advice on cooking a whole chicken. The final product was fantastic.

Ingredients

  • 7 lb. Whole Chicken
  • Lemon Juice
  • Chicken Rub
  • Butter
  • Rosemary
  • Thyme
  • lemon
  • potatoes

Method

Step 1

Soak chicken in salt water and lemon juice for 2 hours.

Step 2

Chop and boil potatoes. Set aside

Step 3

After patting it dry I rubbed it with a basic chick rub on and under the skin.

Step 4

I also put several tabs of butter under the skin. I stuffed it with thyme, rosemary, and half of a lemon.

Step 5

  I cooked it with pre-boiled chopped red potatoes at 420 degrees for 2 hours. I flipped it over half way through while also turning the potatoes.

Step 6

Let rest.
