My mom made a sweet chicken curry last time I was home, and it came out really well. Just got the recipe off her, figured I’d share. – Lavery
Ingredients
- 1 1/2 lbs. chicken
- 2/3 cup honey
- 4 T. water
- 6 T. Dijon mustard
- 4 T. melted butter
- 2 T. Cajun seasong....(Emeril's Bayou Blast is good)
- 4 T. curry powder
- 1 teas. lemon juice
- 1 teas. minced garlic...(sold in a small jar)
Method
Step 1
Preheat oven to 350*. Place chicken in a baking dish. Combine all other ingredients in a bowl, and mix well. Pour mixture over the chicken, and turn chicken a few times to well coat. Bake 40 min. Serve over rice.
